Good Morning Potheads!!!!!

You know in normal situations I would not be doing this but hell enough is enough, I have this neighbor who like clockwork everyday smokes enough that I get woke up to the smell of my 900 sqft apartment Reeking like I live in Woodstock circ. 1969. Now I do not smoke or use Marijuana and I personally detest it but have never put up a fuss against those who choose to partake but hey after the 400th time of waking up to the smell of what can only be described as Cat urine mixed with dirty socks I thought (and this might be the contact high talking) why not do a segment on ways to do Pot without Pissing off and or making your neighbors miserable. Now before I continue it needs saying that I live in Seattle WA and I am not condoning the use of Marijuana illegally nor am under any circumstance going to try any of these tips that I am going to share I just did some research so that I and others like me can co-exist peacefully with our pot smoking neighbors without doing drastic things which could possibly end in either jail time or me being forced to call in favors with friends who have concrete trucks so that (Russian accent) would never find the body.
So to all the worlds Potheads here we go. Note I will be copying and pasting these so I did not create these recipes nor do I claim them as my own rights to any of these Thank God

Tip Number 1.
Classic Space Cake

Space Cakes Ingredients:

200 gr. of baking flour
200 CL. of milk
2 eggs
180 grams of sugar
180 grams of butter
a hot oven (200 °c)
a baking form
8 grams of good (light) hash

Put the butter in the microwave for about 20 seconds until it's a fat paste. Mix the hash with 4/5th of the butter. (heat up the hash with a lighter and crumble it in the butter). With the rest of the butter grease the cake tin so you can get the cake out easy when it's done.
Now mix the butter (and hash), flour, eggs and milk and sugar. Keep on mixing it for a few minutes until it's nice and smooth. If it's to dry: at a little milk. Is it to much of a liquid: ad a little flour.
Put the cake in the oven for about 25 minutes.
Check how it looks before opening the oven. If it's big and brown (I think you can imagine how a cake looks like) open the oven and take the space cakes out.
Leave it outside the oven for about 30 minutes to cool down before getting it out of it's the tin.
All that's left once the space cakes cooled is to slice the bad boy up and enjoy with friends or all on your own.
Tip 2
The World of Chocolate Hash Cake

Ingredients
225 g dark chocolate
225 g cannabis butter
345 g caster sugar, plus an extra pinch
6 eggs, separated into yolks and whites
120 g ground almonds
145 g soft white breadcrumbs
30 g plain flour
4 tsp vanilla essence

For the icing
85 g cocoa powder
225 g icing sugar
130 g butter
170 g caster sugar
6 tbsp water

Method
1. Preheat the oven to 160C/gas 3. Grease and line a 24cm round cake tin.
2. For the space cake: melt the chocolate in a double boiler, or in a bowl placed over a pan of boiling water.
3. Cream the cannabis butter with 345g sugar until pale and softened.
4. Gradually beat in the egg yolks and stir in the almonds. Fold in the cool melted chocolate, breadcrumbs, flour and vanilla essence.
5. In a separate bowl, whip the egg whites with a pinch of sugar until stiff but not dry. Fold into the cake mixture and pour into the prepared cake tin.
6. Bake for 1 hour until firm to the touch.
7. For the icing: sieve the cocoa and icing sugar into a bowl.
8. Warm the butter, sugar and water in a microwave or double boiler and simmer until the sugar has dissolved.
9. Add the liquid to the dry mixture and combine until thickened.
10. Spread the icing over the cooled hash cake.

Tip 3

The green dragon

Ingredients:
  • 1/2-1oz(15-30g) finely ground and dried cannabis
  • 10-20oz(290-580g) High proof alcohol (we recommend Bacardi 151 Rum)
Making the Green Dragon:
  1. Place the finely ground and dried marijuana into an airtight container.
  2. Pour alcohol over the cannabis, and put the lid on the container.
  3. Store in a cool, shaded space for at least 10 days. The longer you wait, the better.
  4. Shake several times a day.
  5. Strain to remove plant matter.

So there you go again am not condoning said behaviors I am however saying in order to not be jerkish to your neighbors by forcing them to suffer your smell there are other ways to enjoy your junk without making your neighbors (myself) wish you were dead or that you would in a weed related stupor drown yourself
So please be kind to your Neighbors like myself try these instead .

Culinary School, Work, Friends and The joys of a good pot of stew

People are often talking about what is known as the Seattle Freeze and no ladies & Germs they are not talking about the weather. The Seattle Freeze refers to the enigma of trying to make friends here in a city where if God forbid you are not from here or given a formal stamp of approval by one of the cities inhabitants than you will be frozen much like ones assets in the bank out of making friends I however have found the cure it is food. That said while in culinary school while we were in class I  saw a recipe for Beef Stew beyond delicious and guaranteed to thaw anyone's Heart even in that of the coldest Seattleite.

1/2 cup flour
4 cups of water

Directions
Toss Chuck in flour till completely coated,
1. melt butter
2, add garlic and unions and brown
3. add chuck and brown till meat is browned on all sides
4. Pour wine into meat let simmer for 30 minutes
5.Add in potatos and carrots

Bon appetite

Oh My Beautiful Wickedness !

Ok to all those that have been following this blog I have been extremely wicked and evil.
Evil that has been soaked in brandy and then coated in butter but evil none the less in the fact that I have neglected this blog in favor of Culinary School and Job means that you all have been expecting posts and I have not given anything new and for that I am extremely sorry however as Par my agreement with my sister the wicked witch of the south I will be writing more frequently.
So lets see Culinary school is going extremely well as is married life and for that I cant complain.
We still live in our rinky dink apartment with its closet kitchen that I still have not been able to master the way to work that god forsaken oven that refuses to hold heat or cook evenly which means the only real cooking that happens is at work which well is work and sadly am not able to share those recipes. But I do promise that by tomorrows class I should have a recipe to share and a lot more to talk about beyond my wonderfully wicked self.
But what I will say is I am now firmly on the path that leads to my dreams and though I am exhausted most days I also feel such a sense of accomplishment that drives me.

Ways to Go On A Date And Feel Like Royalty on and Off a Budget

Dinner  Deck at Six.Seven
So after loads of work , feeling grumpy and romantically deprived my husband pulled a miracle out of his hat now for all my friends let me tell you there are cheaper ways to go on a date but with the food that we had at the Six and Seven which on a price scale of $$$ I can tell you for the flavor it just doesn't get any better. I had the Dungenous crab and shrimp cake which was nothing short of a revelation in culinary excellence,  Cedar plank roasted salmon it was magical with the beautiful truffle cream sauce and blackberry honey roasted asparagus along with seasonal locally foraged mushrooms it was so beautiful I almost cried and finally for desert we had the most beautiful triple chocolate mouse with bing cherry confiture and brandy essence. Now this dinner was not cheap by any sense of the word but for a special occasion I have to give this restaurant 5 stars it was a masterpiece on a level above. Our server was the king of hospitality and yet there was never a minute that we felt pressured or overwhelmed this is the place to go for that special wedding anniversary or just that most special date. However for all of you who do not want to break the bank and still enjoy a night out with a special someone here are some more budget friendly options

The Old Spaghetti Factory whose charm and price value makes this a wonderful Option. For that matter make the evening really special get away from having to fight Seattle Traffic my husband in his infinite wisdom found a company that point to point for a song ($47.99) will rent you a car and a driver who will give you a beautiful tour of the city Keto Towncar (love them) came and picked us up and drove us around the city Our Driver Ashu Keto was fantastic, even had chilled bottles of water waiting for us and were that not reason enough he made sure that we had a good time by offering a guided tour of the city in a sleek black Chrysler 300 top of the line full leather Interior it was just a dream come true so for all of you who would like to live like a well to do for a time can call (206)853-8725 or email ashuketo@yahoo.com this truly was a date to remember and I wish you all the same.

Why I love cooking?

I was sitting in my apartment trying to think what cooking means for me and why its so important to me.
When I started cooking it was a way to stay close to my Nana who passed away almost two years ago but as time passed I started to realize that it stopped being about her and became about me.
When I am cooking I get to be everything that I dreamed of being as a little girl. A ballerina, a singer, artist everything in one location my beloved kitchen.

Chicken Enchiladas The Right Way

There are those that will tell you that there are more than one way to make an enchilada and while there is more than one sauce, more than one stuffing, or more than one topping there is not more than one way that you should make it or there should not be.
I was recently confronted by an individual who will remain nameless who thought the way to make enchiladas was to make a soup and boil the heck out of the meat then drain the juice down the drain and as someone who has actually lived in a Hispanic culture and has learned the right way to make them I was needlessly to say appalled at the thought of such a waste of flavor.
If you are reading this blog than you know that the flavor is the whole reason that we cook to create as much good flavor as we can and place it into our dishes is the only reason beyond the need to survive that we should strive for that said I figure now was a good time to post how to make enchiladas I hope you all enjoy.

Chicken Enchiladas
2         pounds chicken (preferably breasts but any will do)
1         cup chipotle or 1/2 cup jalapeno peppers finely diced
1 1/2   cups onions minced
1/2      cup minced garlic
2         cups tomatos finely diced
1/2      cup fresh cilantro minced
1         cup fresh lime juice
2         tablespoons of salt
1         teaspoon cumin
2         packages of corn tortillas

Directions
In large mixing bowl allow raw chicken to marinate with lime juice, garlic , cilantro and cumin overnight
this is to maximize the flavor when you cook it but for a short cup one can make the time for one hour to two.
Shredded Chicken
Take marinated chicken out of the bowl  reserve the marinade and either place chicken in a pan on the stove and cook till there is no pink in the middle or place in oven at 350 degrees till completely cooked and allow to cool completely. Once cooled shred chicken by pulling apart with fingers till it resembles the picture.

Next take remaining marinade, tomatos, onions, chicken and peppers and warm in a pan on stove top over medium heat till hot and well combined remove
from heat and prepare one of the following sauces

Mexican Red Sauce
3 tablespoons chili powder
3 tablespoons flour
1 teaspoon cocoa powder
1/2 teaspoon garlic salt
1 teaspoon oregano
3 cups water
1 (8 ounce) can tomato sauce

 Directions:
Combine all dry ingredients in a small bowl.
Stirring constantly, slowly add enough of the water to make a thin paste.
Pour into pan and add rest of water.
Cook over medium heat, stirring constantly, until mixture thickens.
 Stir in tomato sauce.

Cream Cheese and Sour cream Sauce

1 pkg cream cheese
1 small tub sour cream
1 can creme of chicken
1 1/2 cup water

Directions
combine all ingredients in medium sauce pan over medium heat over medium heat
until smooth and use immediately.

Chile Verde Sauce (green sauce)

2-3 Tbsp. extra-virgin olive oil
1 large onion, minced
5-6 cloves garlic, minced or pressed
2 green peppers, chopped
1-2 jalapenos, seeded and membranes removed if desired (and I desire. Always.)
1 1/2 lb. tomatillos, husked and quartered or halved
1/2 bunch cilantro, coarsely chopped
1 1/2 tsp. Kosher salt
1/4 tsp. black pepper
1 1/2 tsp. cumin
4 c. chicken broth
In a large saucepan or stock pot, heat olive oil over medium heat. Saute onions and garlic until tender and fragrant. While onions are sauteeing, combine tomatillos, green peppers, jalapeno peppers, and cilantro in your blender. Process until smooth; you may have to do it in batches and/or add some chicken broth to make things blendable Pour the tomatillo mixture over the onions and garlic and add chicken broth, salt, pepper, and cumin. Simmer 15 minutes-1 hour
Stuffing your Enchiladas

pour small amount into frying pan over low heat and dip tortillas into sauce and then immediately fill with chicken mixture and roll up place in baking pan if desired sprinkle shredded cheese over the top and place in oven for 5 minutes to melt cheese otherwise serve immediately and enjoy
Que te divertes!!!!
Have fun!!!!
